So with all of the continuous news 24/7… the end is coming, over 100,000 deaths.. families are separated.. jobs are being lost.. Doomsday gloom and doom… OR do you catch that small sliver of Sunshine… Focus on the positive and be a positive influence on all those you have the opportunity to touch everyday….
Focusing on the positive… is my choice… lifting others up despite all of this dreary news… Making great meals for my family…Having virtual Happy Hours with all three of my kids… so proud of all of them.. professionals working remotely and doing their part to deal with this crisis…

Roasted Chicken with basil, lemon pepper paprika and olive oil… Roasted Tomatoes with olive oil and melted cheese… Roasted new potatoes and green beans… are you seeing a pattern here??? Convection roasting is the most amazing feature a stove has to offer… you can start cooking late in the day.. (I mean really late… like eating at 9:00 pm late)…I am busy working all day..

Happiness is a much better option… Upward and Onward… April is a great month… my best birthday present of all at the young age of 2 years old was/is my my brother…. We both share the same birthday.. April 28th…. and for the the years, we have shared every birthday… Even as children… our mom had two separate birthday parties… my brother always had a chocolate “army man” birthday cake… I always had a “Pink Peppermint Cake”…. Family ties run deep… Never, ever give up on your family… because “Family is Everything”...
