When I think of Fall I think about making my Dad’s Onion Soup…. I can see him standing in the kitchen slicing up onions, very thinly and then placing the onions in the pan with butter and olive to simmer until they were a beautiful carmelized pan of yumminess. This past weekend, I made Onion Soup and it was delicious….

Snow Day Baking…

We woke up to a beautiful snowy morning this past Sunday…The snow was coming down covering the yards, homes and rooftops…. Since all of our “littles” are no longer little…. playing in the snow and sledding down the hills were mere memories of days gone by!

However, Teppy was not going to let a perfectly beautiful snow day go by without doing something fun, so I headed to the kitchen and started playing… I really wanted to “smell” the wonderful aroma of homemade bread baking. Here are some pics of the baking process…

So while the dough was rising for a second time, I made Mini-Peach Cobblers..

And French 75’s just seemed to suit the day…So I got the Champagne Glasses out since we were celebrating a Snow Day!

Well by this time the bread had risen to the occasion and it was time to send the loaves to the oven to bake… my kitchen smelled heavenly…

And so my friends.. that is how a Southern Girl from Mississippi, spends a snow day in South Carolina… Living, Loving Life in South Carolina….

Wednesday Night Lasagna….

Tried a Tep’s Original Lasagna Recipe Wednesday Night… Delicious!!

So I wanted to “amp” up my lasagna recipe yesterday… and it was delicious! I made a few changes, like adding portabella mushrooms to my “tomato sauce”, as well as using my normal hamburger meat, green onions and garlic… Then I thought about my Cannelloni recipe… I always use chopped spinach in the Béchamel Sauce.. so I thought why not??? I added the spinach to my ricotta cheese and eggs as well as some of the Costco Pesto…. And yes it was delicious!!!

Friday Night Pizza

Friday nights are for Teppy’s Homemade Pizza… and let me tell you it’s so easy! It’s better than delivery, quicker and much more delicious!

Start your pizza with a “homemade pizza dough” from Publix…. sauté chopped bell peppers, sliced mushrooms, sliced olives and sliced pepperoni. Roll pizza dough onto a pizza stone. Layer veggies and pepperoni onto dough. Pour one small jar of pizza sauce, your favorite brand! Top with lots of shredded mozzarella cheese and bake at 375 to 400 degrees, depending on your oven.

Cozy Comfort Chicken Pot Pie

Cozy Comfort Chicken Pot Pie

Who doesn’t love Chicken Pot Pie on a cold night? I made this one night last week. It was delicious! And so easy!

I already had a homemade pie crust in the freezer…. just popped that out and let it thaw out.. I put six chicken breasts on a sheet pan covered with foil and seasoned them with salt and pepper.

While the chicken was hanging out in the oven, I melted a stick of unsalted butter and stirred in one half cup of flour. After the flour was thoroughly incorporated into the butter, I added a teaspoon of kosher salt. Next on the list was one to two cups of chicken broth, stirring constantly until the mixture is thickened. Add about a half of cup of cream for extra deliciousness!

Remove the chicken from the oven, let cool and cut up into pieces. Add to the cream mixture and stir. Add a large bag of frozen mixed vegetables, English peas, diced carrots and green bbeansbeans

Pour the chicken and veggie mixture into a large round Pyrex casserole. Top with an unbaked pie shell and bake at 350 degrees for about 45 minutes to an hour until the top is golden brown and bubbly. Serve with a salad and a nice glass of Chardonnay
