
So after a crazy, busy week full of opportunities to do more, learn more and most importantly, be thankful for the week… my favorite go to stress relief is cooking…. And I love to cook in my new Carolina kitchen…
Ina Garten’s Parmesan Chicken is always my “go to recipe”…. And I suppose you want know why I want to make such a complicated dish on a Friday night. I love this recipe because there are three distinct steps one follows to create this delicious dish…
The first step is to “beat the chicken breast”…. then you get to “dip” the chicken breast into 3 distinct dishes…. from a mixture of flour, salt and pepper to an egg wash. Once you complete these three steps, place in a skillet that has melted butter and olive oil. Brown on both sides and place in a warm oven on paper towels to stay warm while you cook the remaining chicken breasts.
While cooking the chicken breasts, place fresh green beans in a lightly buttered skillet and barely cover with water. Steam for 5 – 10 minutes until done, but still slightly crunchy.
Of course, I always have to have a salad every single night. So for tonight, I made a spinach salad with dried cranberries and toasted pecans. It was perfect with the blue cheese crumbled over it and Brianna’s Real French Vinaigrette.
Now that everything is ready to plate up… place Parmesan Chicken on your plate with Fresh Green Beans and Spinach Salad with Cranberries and Pecans… Pour yourself a glass of wine and enjoy your “Friday Night Stress Relief Dinner.”
